Caramel Apple Cheesecake Bars

The perfect fall dessert to share with only 1 1/2 hour total time to make. Serve at your tailgate party, Halloween camp outing, or Thanksgiving.

INGREDIENTS

Graham/Oats Bottom Layer:

  • 1/4 cup brown sugar

  • 1 cup graham cracker crumbs

  • 3/4 cup rolled oats

  • 1/2 cup melted butter, plus more for greasing the plate

Cheesecake Layer :

  • 2 8oz package softened cream cheese

  • 2 tbsp corn starch

  • 1/4 cup brown sugar

  • 1/4 cup white sugar

  • 1/2 tsp ginger

  • 2 tsp vanilla extract

  • 1/2 tsp cinnamon

Apple Crisp Topping:

  • 1/4 cup all purpose flour

  • 1/4 cup rolled oats

  • 1/4 cup brown sugar

  • 1/2 tsp cinnamon

  • 2 tbsp coconut oil

  • 2 large apple, peeled and thinly sliced

  • Caramel Topping

INSTRUCTIONS

  1. Preheat your oven to 350F.

  2. Grease a 9 x 13in pan with butter or cooking spray, including the sides of the pan.

  3. Combine graham cracker crumbs, rolled oats, melted butter and brown sugar in a mixing bowl.

  4. Press this mixture into the greased pan to create the bottom layer.

  5. Bake for 7 min. Let cool.

  6. Mix cream cheese, brown sugar, white sugar, cinnamon, ginger, cornstarch and vanilla.

  7. Pour mixture on top of graham cracker layer to create cheesecake layer.

  8. Arrange sliced apples onto cheesecake layer.

  9. Add apple crisp mixture.

  10. Bake at 350F for 40-50 min.

  11. Let cool and refrigerate overnight.

  12. Drizzle caramel on top. Enjoy!
